Did you know that there are more than 500,000 cases of food poisoning in the UK each year?

EU and UK regulations state that all food handlers must receive appropriate training in food safety practices relevant to their duties. However, having a good understanding of food safety practices is not only a legal requirement, it is also essential in protecting the health of both consumers and food handlers.

The Level 2 Award in Food Safety in Catering (RQF) is a regulated and nationally recognised qualification for people working, or planning to work, in the food catering industry. The qualification is also ideal for those who come into contact with food handling areas due to the nature of their work, such as pest control officers and delivery personnel.

Successful candidates will gain a strong understanding of the importance of food safety, including correct food handling practices and measures to reduce the risk of contamination.


Who is it designed for?

The Level 2 Award in Food Safety in Catering (RQF) is a regulated and nationally recognised qualification designed for those working, or planning to work, in the food catering industry.   3. Legal responsibilities of food handlers
  4. Types of contamination and the associated risks
  5. Bacteriology
    1. Food poisoning
    2. Foodborne illnesses
  6. An introduction to Hazard Analysis and Critical Control Points (HACCP)
  7. Personal hygiene
  8. Work flow, work surfaces and equipment
  9. Cleaning and disinfection
  10. Waste disposal
  11. Pest control
  12. Safe food handling practices including time and temperature controls
    1. Preparation
    2. Cooking & reheating
    3. Chilling
    4. Cooling
    5. Freezing
    6. Thawing
    7. Hot holding
    8. Displaying Food
    9. Core temperatures
    10. Food preservation
    11. Storage
  13. Stock control procedures

Assessment

1 x Theory assessment (Multiple Choice Question Paper) and continuous formative assessment conducted throughout the course. Refresher training recommended every 3 years

Refresher Training

It is recommended that you undertake this qualification every three years in order to comply with legal and statutory requirements. Various things change over a three year period, and it is important to keep your knowledge up to date.
