Did you know that there are more than 500,000 cases of food poisoning in the UK each year?

EU and UK regulations state that all food handlers must receive appropriate training in food safety practices relevant to their duties. However, having a good understanding of food safety practices is not only a legal requirement, it is also essential in protecting the health of both consumers and food handlers.

The Level 2 Award in Food Safety for Manufacturing (RQF) is a regulated and nationally recognised qualification designed for those who work, or are planning to work, in a food manufacturing environment.

Successful candidates will develop a strong understanding of the importance of food safety, including correct food handling practices and measures to reduce the risk of contamination.

Who is it designed for?

The Level 2 Award in Food Safety for Manufacturing (RQF) is a regulated and nationally recognised qualification specifically designed for people working, or planning to work, in a food manufacturing environment.

The Food Safety for Manufacturing Syllabus Includes:

  1. The importance of food safety
  2. Food safety laws
  3. Legal responsibilities of food handlers
  4. Types of contamination and the associated risks
  5. Bacteriology
    1. Food poisoning
    2. Foodborne illnesses
  6. An introduction to Hazard Analysis and Critical Control Points (HACCP)
  7. Personal hygiene
  8. Design of premises, work surfaces and equipment
  9. Cleaning and disinfection
  10. Waste disposal
  11. Pest control
  12. Safe food handling practices including time and temperature controls
    1. Cooking & reheating
    2. Chilling
    3. Cooling
    4. Freezing
    5. Thawing
    6. Hot holding
    7. Temperature measuring devices
    8. Core temperatures
    9. Food preservation
    10. Storage
  13. Stock control procedures
  14. Food spoilage


1 x Theory assessment (Multiple Choice Question Paper) and continuous formative assessment conducted throughout the course. Refresher training recommended every 3 years

Refresher Training

It is recommended that you undertake this qualification every three years in order to comply with legal and statutory requirements. Various things change over a three year period, and it is important to keep your knowledge up to date.
